What is my favorite, can’t do without Thanksgiving dish? I will never have a Thanksgiving dinner without my dads southern cornbread stuffing. We have had it on our table for at least the last 40 years. Our family’s cornbread stuffing is light and fluffy, savory with a hint of sweet and the perfect side dish for any diner table. It goes well with turkey, cranberry sauce, mashed potato, the works. Cornbread stuffing is just the thing your Thanksgiving menu may be missing.
Recipe
Ingridients:
1 box of Jiffy Corn Muffin mix
1 cup yellow onion
1 cup celery
4 hard boiled eggs
Chicken broth (1/2 cup to 1 cup depending how moist you like it)
Salt and pepper to taste
Instructions:
Cook the Jiffy Corn Muffin mix according to the directions on the box. Chop the onions and celery and saute in butter until cooked. Crumble the cooked muffins into a bowl. Add the celery and onion. Chop the hard boiled eggs and add to the corn bread mixture. Pour in chicken broth until moist (to taste). Season with sat and pepper (to taste).
