Mississippi Mud Cake is the perfect Christmas dinner desert. It is a rich, marshmellowy, chocolaty mess of delicious. This family recipe has been passed down from my grandmama in Eufaula Alabama to my mother and to me. We used to treat ourselves to this decadent desert during the holidays every year. I have sweet memories of sitting at the bar in my grandmama’s kitchen when the lights were low and the tree was lit and the kids would sneak a second piece while the adults were having their nightcaps. I hope I am able to pass this tradition down to my own children so that they will have the same sweet memories.

Recipe:

2 sticks oleo

4 eggs

2 cups sugar

dash of salt

1/2 cup cocoa

1 1/2 cups plain flour

1 1/2 cups pecans (optional)

1 jar marshmallow cream

Melt oleo, add cocoa, beaten eggs, flour, salt and sugar. Beat well then add nuts and stir. Pour into greased and floured 9 x 13 pan. Bake for 30-35 minutes at 350 degrees. Pour marshmallow cream over cake while still hot and spread.

Icing:

1/2 stick margarine (softened)

1/2 cup milk

1 teaspoon vanilla

1/3 cup cocoa

1 package powdered sugar

Beat well and pour over marshmallow cream. When cake cools cut into squares.
